To recreate the authentic water of Santorini, we used basalt from the volcano of 1600 BC and developed a special filter through which all the water used during the brewing process passes.

In September, the bees in Santorini drill into the grapes that the winemakers ripen in the sun to produce Santorini Vinsanto wine. This unique and rare honey is added at the end of the brewing process to retain its delicate flavor.

Citrus medica was brought to Greece from Persia by Alexander the Great. In Naxos it is cultivated for its fine aroma and flavor, extracted from  the fragrant leaves of the tree using traditional methods. This unique extract is added to the beer and gives it a distinct taste.
